Shelf life is the second battle. Fat-rich dairy powders oxidize quickly, losing aroma and colour long before the printed date. WILPAC canning lines add vacuum seaming or nitrogen dosing to push residual oxygen below two percent, then close the tin with a double seam or an airtight foil membrane and overcap.
